Title: Turkey Roll-Ups

Yield: 6 Servings

6tbShredded reduced-fat sharp cheddar cheese, (1-1/2 ounces)
1tbThinly sliced green onions
2tsDijon mustard
1 Tub nonfat process cream cheese product, softened
6 Flour tortillas
12slCooked deli turkey breast, (1-ounce)
12lgFresh spinach leaves or
  Curly leaf lettuce leaves
1 Unpeeled cucumber
  Sliced into 24 slices, 1/8-inch thick

Combine first 4 ingredients in a bowl; stir well. Spread 3 tablespoons cheese mixture over each tortilla. Top each with 2 slices turkey, 2 spinach leaves, and 4 cucumber slices; roll up. Yield: 6 servings (serving size: 1 roll-up).
